Moving forward, beyond time.

In Japan, salmon that return to rivers in autumn to spawn are known as Aki-zake. By contrast, salmon caught from spring to early summer―outside the usual season―are called Toki-shirazu. Although still immature, they are prized for their rich flavor.

The name Toki-shirazu means “one who does not choose the time.” Appearing earlier than others, this salmon is seen here as a being that moves ahead, forging the path first. So that those who follow will not lose their way, marks of the North Star and the Big Dipper are placed upon its head as guiding signs toward the path ahead.
